Sounds like a possible infection. If so, hopefully it was limited to just the plastic bottle. Otherwise the only other thing I can think of is extreme over

Try chilling and tasting your first bottle after 10 days. It should be carbonated. Then refrigerate the batch--it should fall clear in time for the 4th. Mike
